Low Carb Tuna Patties – Recipe

I do not know where the original recipe came from. The credit for the original recipe belongs to the awesome dynielle B on Obesity Help. I tweaked it to fit my tastes (and what I had in my cabinet) and it’s very yummy. This is appropriate for post WLS patients on soft foods and any phase after that. You can substitute your favorite tuna and seasonings.

Low Carb Tuna Patties

  • 1 can Bumblebee Sensations Lemon & Pepper Tuna Medley – drained
  • 1 large egg
  • 3 Tbsps grated parmesan cheese
  • dash onion powder
  • dash garlic powder or garlic salt

Combine all ingredients and form into three equal size patties. Spray skillet with Pam if desired or heat a tiny amount of oil in the pan to prevent sticking, preheat over medium heat.

Put patties in the pan (I was able to fit two of them in mine) and cook until brown on both sides and cooked through. Approximately 3-5 minutes per side for nice even browning.

The nutrition information using my ingredients ended up being per patty (all I can eat is one, by the way): Fat: 5.09g/Carbs: 1.74g/Protein: 16.03g/Calories: 120

I apologize for the picture quality. All I had was my Blackberry to take the photo. My first patty didn’t turn out so pretty since I didn’t let it brown long enough before trying to turn it over. The other two turned out very nicely (the one in the photo was the second patty). The not so pretty one is still tasty, though!

This one is a definite do again. I also think I may try this with canned salmon.
